Viel Hype, wenig Schärfe – meine Enttäuschung mit dem Tormek T-1

Positiv:
Die Verarbeitung und Haptik des Tormek T-1 sind wirklich hochwertig, und die Bedienung wirkt auf den ersten Blick sehr einfach und intuitiv.

Negativ:
Voller Vorfreude habe ich den Tormek T-1 ausgepackt und gleich vier Messer vorbereitet. Die Ernüchterung folgte leider schnell: Für das erste Messer habe ich rund 45 Minuten benötigt – das Ergebnis war zwar scharf, aber bei weitem nicht rasiermesserscharf. Bei den drei weiteren Messern war der Zeitaufwand ähnlich hoch, mit dem gleichen mittelmäßigen Resultat.

Ich habe ernsthaft darüber nachgedacht, das Gerät zurückzugeben. In vielen Social-Media-Beiträgen wird gezeigt, wie Messer mit wenigen Durchgängen und etwas Gratentfernung extrem scharf werden – in meiner Praxis war das leider nicht der Fall. Insgesamt hat mich das Gerät nicht überzeugt.

Danke für deine ausführliche Bewertung. Wie schade, dass du mit den Ergebnissen des Tormek T-1 nicht wirklich zufrieden bist. Ich möchte gerne ein paar Tipps mit dir teilen, mit deren Hilfe du vielleicht ein besseres Ergebnis erzielen kannst.
- Beim ersten Schleifen kann es etwas länger dauern, bis das Messer wieder richtig scharf ist. Oft ist das der Fall, wenn die Messer vorher mit einer anderen Methode geschliffen wurden und du die Fase erst neu schleifen musst.
- Stelle den Winkel im besten Fall nah oder exakt auf den bisherigen Winkel ein und schleife dann die erste Seite mit wenig Druck bis zu einen Grat auf der ganzen Fase spürst. Erst dann gehst du zur zweiten Seite und schleifst dort genau so lange.

- Nach dem Schleifen wird das Messer auf der Abziehscheibe poliert und damit der Grat entfernt. Dabei ist es wichtig, dass der Winkel nicht zu steil ist, sonst wird die Schneide wieder stumpf poliert. Auch hier kannst du die Markermethode verwenden.

Perfect Edge in Three Simple Steps

With the Tormek T-1 Kitchen Knife Sharpener you sharpen the entire bevel of your knife creating a new apex. The low RPM and precise angle setting ensures minimal steel removal and eliminates risk of overheating your edge. Professional sharpness at home

1. Set preferred edge angle

17° is a good angle to start with if you are unsure of what angle to choose. A small angle will cut more easily, while a large angle will give a stronger edge. 

2. Sharpen on both sides

Insert the knife into the guide. Follow the edge profile and apply gentle pressure, as if you were slicing a tomato. 

3. Hone to final finish

Deburr and polish the knife on the honing wheel to achieve a razor-sharp edge. Also for maintaining your knives between sharpenings.
